Lemon Cream Scones
Ingredients:
– 2 cups all-purpose flour
– 1/4 cup sugar
– 1 tbsp baking powder
– 1/2 tsp salt
– 1/2 cup unsalted butter, cold and cut into cubes
– 1/2 cup heavy cream
– 1 large egg
– Zest of 1 lemon
– 1 tbsp fresh lemon juice
– 1 tsp vanilla extract
For the Glaze:
– 1 cup powdered sugar
– 2-3 tbsp fresh lemon juice
Instructions:
1. **Preheat Oven:** Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. **Mix Dry Ingredients:** In a large bowl, whisk together the flour, sugar, baking powder, and salt.
3. **Cut in Butter:** Add the cold butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
4. **Add Wet Ingredients:** In a separate bowl, whisk together the cream, egg, lemon zest, lemon juice, and vanilla extract. Pour the wet ingredients into the flour mixture and stir until just combined.
5. **Shape Dough:** Turn the dough out onto a floured surface and gently knead it a few times. Pat the dough into a circle about 1-inch thick. Cut the dough into 8 wedges.
6. **Bake:** Place the wedges on the prepared baking sheet. Bake for 15-18 minutes, or until the scones are golden brown.
7. **Prepare Glaze:** While the scones are baking, whisk together the powdered sugar and lemon juice to make the glaze.
8. **Glaze Scones:** Once the scones have cooled slightly, drizzle the lemon glaze over the top.
