Blender Cornbread
Ingredients:
– 2 cups corn kernels (fresh or canned, drained)
– 3 eggs
– 1/2 cup milk
– 1/4 cup melted butter or oil
– 1 cup sugar
– 1 cup cornmeal
– 1/2 cup all-purpose flour
– 2 tsp baking powder
– 1/4 tsp salt
– 1 tsp vanilla extract (optional)
Instructions:
1. **Preheat Oven:** Preheat your oven to 350°F (175°C). Grease a baking dish or line it with parchment paper.
2. **Blend Wet Ingredients:** In a blender, combine the corn kernels, eggs, milk, melted butter or oil, sugar, and vanilla extract (if using). Blend until smooth.
3. **Mix Dry Ingredients:** In a large bowl, sift together the cornmeal, flour, baking powder, and salt.
4. **Combine Ingredients:** Pour the blended mixture into the bowl with the dry ingredients. Stir until just combined. The batter will be slightly thick.
5. **Bake:** Pour the batter into the prepared baking dish and smooth the top. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
6. **Cool and Serve:** Let the cornbread cool in the pan for a few minutes before slicing and serving.
