Cowboy Meatloaf and Potato Casserole

Ingredients:
For the Meatloaf:
1 lb ground beef
1/2 lb ground pork
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup breadcrumbs
1/4 cup milk
1/4 cup barbecue sauce
1 egg
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
For the Potato Casserole:
4 large russet potatoes, peeled and sliced thinly
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup milk
2 tablespoons unsalted butter
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper, to taste
1 tablespoon olive oil
1/4 cup chopped fresh parsley (for garnish, optional)

Directions:
Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare the Meatloaf:
In a large bowl, combine ground beef, ground pork, chopped onion, minced garlic, breadcrumbs, milk, barbecue sauce, egg, salt, black pepper, smoked paprika, oregano, and thyme.
Mix until well combined but do not overmix.
Form the meat mixture into a loaf shape and place it in the center of a large baking dish or casserole dish.
Prepare the Potato Casserole:
In a large saucepan, boil the sliced potatoes in salted water until tender but still firm, about 8-10 minutes. Drain and set aside.
In a mixing bowl, combine shredded cheddar cheese, sour cream, milk, garlic powder, onion powder, salt, and black pepper. Mix until smooth.
Gently fold the cooked potato slices into the cheese mixture.
Assemble the Casserole:
Arrange the potato mixture around the meatloaf in the baking dish.
Dot the top of the potato mixture with butter and drizzle with olive oil.
Bake:
Bake in the preheated oven for 45-55 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C) and the potatoes are golden and bubbly.
Serve:
Let the casserole cool for 5 minutes before garnishing with chopped fresh parsley, if desired. Slice and serve hot.
