Smothered Pork Chops

Ingredients:
4 bone-in pork chops (1 inch thick)
2 tablespoons olive oil
1 cup all-purpose flour
Salt and pepper to taste
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 large onion, thinly sliced
3 cloves garlic, minced
1 cup chicken broth
1 cup milk
2 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
1 tablespoon chopped fresh thyme (or 1 teaspoon dried thyme)
1 tablespoon chopped fresh parsley (for garnish)

Directions:
Prepare the Pork Chops:
Season the pork chops with salt, pepper, paprika, garlic powder, and onion powder.
Dredge the pork chops in flour, shaking off excess.
Cook the Pork Chops:
Heat olive oil in a large skillet over medium-high heat.
Add pork chops and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove pork chops from skillet and set aside.
Make the Gravy:
In the same skillet, add sliced onions and cook over medium heat until softened, about 5 minutes.
Add minced garlic and cook for an additional 1 minute.
Stir in chicken broth, milk, Dijon mustard, Worcestershire sauce, and thyme. Bring to a simmer and cook until the sauce has thickened slightly, about 5 minutes.
Smother the Pork Chops:
Return the pork chops to the skillet, nestling them into the gravy.
Reduce heat to low, cover, and simmer for 15-20 minutes, or until the pork chops are tender and have absorbed the flavors of the gravy.
Serve:
Garnish with chopped parsley and serve hot.
