Bacon Wrapped Cream Cheese Stuffed Chicken Breast
Ingredients:
4 boneless, skinless chicken breasts
8 oz (225g) cream cheese, softened
1/2 cup shredded cheddar cheese
1/4 cup chopped green onions
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon black pepper
8 slices of bacon
Toothpicks (to secure the bacon)
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
Prepare the Cream Cheese Filling:
In a medium bowl, mix together the softened cream cheese, shredded cheddar cheese, chopped green onions, garlic powder, onion powder, paprika, and black pepper until well combined.
Prepare the Chicken Breasts:
Lay the chicken breasts flat on a cutting board. Using a sharp knife, carefully slice a pocket into the side of each chicken breast, making sure not to cut all the way through.
Stuff the Chicken Breasts:
Divide the cream cheese mixture into four equal portions. Stuff each chicken breast with the cream cheese filling, pressing it inside the pocket you created.
Wrap the Chicken in Bacon:
Wrap each stuffed chicken breast with two slices of bacon, making sure the ends of the bacon overlap slightly. Secure the bacon with toothpicks to keep it in place.
Bake the Chicken:
Place the bacon-wrapped chicken breasts in the prepared baking dish. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the bacon is crispy.
Optional: Broil for Extra Crispiness:
If you prefer the bacon to be extra crispy, switch the oven to broil for the last 2-3 minutes of cooking, keeping a close eye to avoid burning.
Serve:
Remove the toothpicks from the chicken breasts before serving. Serve the bacon-wrapped cream cheese stuffed chicken breasts hot, with your choice of side dishes.
