Avocado, Mozzarella, and Tomato Grilled Cheese
Ingredients:
2 slices of your favorite bread (sourdough, whole wheat, or ciabatta recommended)
1 ripe avocado, sliced
2-3 slices of fresh mozzarella cheese
1 ripe tomato, sliced
2 tablespoons pesto (optional)
1-2 tablespoons butter, softened
Salt and pepper to taste
Fresh basil leaves (optional, for extra flavor)

Prepare Ingredients:
Spread a thin layer of pesto on one side of each bread slice if using. This adds a rich, herbaceous flavor to the sandwich.
Assemble the Sandwich:
On one slice of bread (pesto side up), layer the fresh mozzarella slices. Then, add the tomato slices on top of the cheese. Season the tomatoes with a pinch of salt and pepper.
Arrange the avocado slices over the tomatoes. If desired, add a few fresh basil leaves for an extra burst of flavor. Top with the second slice of bread, pesto side down.
Butter the Bread:
Spread softened butter on the outside of each slice of bread. This will help achieve a crispy, golden-brown crust when grilled.
Grill the Sandwich:
Heat a skillet or griddle over medium heat. Once hot, place the assembled sandwich on the skillet. Cook for 3-4 minutes on each side, pressing down gently with a spatula, until the bread is golden and crispy and the cheese is melted.
Serve:
Once the sandwich is done, remove it from the skillet and let it sit for a minute before slicing it in half. Serve warm, and enjoy with a side salad or a bowl of soup.
