Low Carb Bacon Cheeseburger Casserole
Ingredients:
For the Casserole:
1 lb (450 g) ground beef
4 slices bacon, chopped
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup mayonnaise
1/2 cup sour cream
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
2 large eggs
2 tbsp Dijon mustard
1 tbsp Worcestershire sauce
1/2 tsp smoked paprika
1/2 tsp dried oregano
Salt and pepper to taste
For Garnish:
Pickles, sliced (optional)
Chopped fresh parsley or chives (optional)
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or casserole dish.
Cook the Bacon and Beef:
In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and drain on paper towels, leaving about 1 tablespoon of bacon fat in the skillet.
In the same skillet, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onion is softened. Drain any excess fat.
Combine Ingredients:
In a large mixing bowl, combine the cooked beef mixture, crispy bacon, mayonnaise, sour cream, cheddar cheese, mozzarella cheese, eggs, Dijon mustard, Worcestershire sauce, smoked paprika, dried oregano, salt, and pepper. Mix until well combined.
Bake the Casserole:
Spread the mixture evenly in the prepared baking dish. Smooth the top with a spatula.
Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the top is golden and bubbly.
Garnish and Serve:
Remove the casserole from the oven and let it cool for a few minutes. Garnish with sliced pickles and chopped parsley or chives if desired.
Serve warm.
