Ingredients:
For the Chicken Marinade:
1 lb (450 g) chicken breast, thinly sliced
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp cornstarch
For the Crispy Noodles:
8 oz (225 g) egg noodles or thin rice noodles
3-4 tbsp vegetable oil (for frying)
For the Stir-Fry:
2 tbsp vegetable oil
1 onion, thinly sliced
2 cloves garlic, minced
1 red bell pepper, thinly sliced
1 cup broccoli florets
1 carrot, julienned
1/2 cup snap peas
2 green onions, chopped
For the Sauce:
1/4 cup soy sauce
2 tbsp oyster sauce
1 tbsp hoisin sauce
1 tbsp cornstarch
1/2 cup chicken broth
1 tbsp sesame oil
Instructions:
Marinate the Chicken:
In a bowl, combine the chicken slices with soy sauce, oyster sauce, and cornstarch. Mix well and set aside to marinate for at least 15 minutes.
Prepare the Noodles:
Cook the noodles according to the package instructions. Drain and rinse under cold water. Set aside.
Heat 3-4 tablespoons of vegetable oil in a large skillet over medium-high heat. Spread the cooked noodles in an even layer in the skillet and cook until crispy and golden brown on one side, about 5-7 minutes. Flip and cook until the other side is crispy. Remove the noodles from the skillet and set aside.
Prepare the Sauce:
In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, cornstarch, chicken broth, and sesame oil. Set aside.
Cook the Chicken:
In the same skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the marinated chicken and cook until no longer pink, about 5-6 minutes. Remove the chicken from the skillet and set aside.
Stir-Fry the Vegetables:
In the same skillet, add the onion and garlic. Stir-fry for 2-3 minutes until fragrant.
Add the bell pepper, broccoli, carrot, and snap peas. Stir-fry for another 4-5 minutes until the vegetables are tender-crisp.
Combine Everything:
Return the cooked chicken to the skillet with the vegetables. Pour in the sauce and stir well to combine. Cook for 2-3 minutes until the sauce thickens and everything is heated through.
Serve:
Place the crispy noodles on a serving plate and top with the chicken and vegetable stir-fry. Garnish with chopped green onions.
