Easy Fresh Strawberry Pie

🍓 Easy Fresh Strawberry Pie
Sweet, juicy strawberries in a silky homemade glaze, all nestled in a buttery, golden crust — this pie is a refreshing treat you’ll come back to again and again!

🥣 Ingredients:
For the Pie:
1 frozen pie crust (or homemade, baked and cooled)

1 ¼ cups granulated sugar

3 tablespoons cornstarch

1 ¼ cups water

1 (3 oz) package strawberry gelatin (like Jell-O)

1 lb fresh strawberries, hulled and halved (or quartered if large)

Optional: whipped cream, for topping

👩‍🍳 Instructions:
1. Prepare the Pie Crust:
Bake the frozen pie crust according to package directions until golden and fully cooked. Let it cool completely before filling.

2. Make the Glaze:
In a medium saucepan, whisk together sugar and cornstarch.

Gradually stir in the water and cook over medium heat, stirring constantly until the mixture begins to boil and thicken (about 5–7 minutes).

Remove from heat and stir in the strawberry gelatin until completely dissolved.

Let the glaze cool to room temperature, but don’t refrigerate — it should be pourable.

3. Assemble the Pie:
Arrange the fresh strawberries in the cooled pie crust.

Pour the cooled glaze evenly over the strawberries, gently tilting the pie to help the glaze seep between the berries.

Refrigerate the pie for at least 3–4 hours, or until set.

4. Serve:
Slice and top with whipped cream if desired. Enjoy chilled!

🍽 Servings:
1 pie = 8 slices

📝 Tips & Notes:
For extra gloss and flavor, brush a bit of apricot jam over the crust edges before adding the glaze.

You can mix in blueberries or raspberries for a mixed berry pie version.

Make ahead the night before for the best texture!
