🍫🥜 Gooey Reese’s Cheesecake Cookies 🍪
Peanut Butter Chocolate Heaven!
Decadent cream cheese cookies stuffed with Reese’s cups and chocolate chips—soft, gooey, and utterly irresistible!
🧾 Ingredients
For the Dough:
½ cup unsalted butter, softened
4 oz cream cheese, softened
¾ cup brown sugar, packed
¼ cup granulated sugar
1 large egg
1 tsp vanilla extract
1½ cups all-purpose flour
½ tsp baking soda
¼ tsp salt
Add-ins:
1 cup semi-sweet chocolate chips
1 cup mini Reese’s Peanut Butter Cups, chopped
Optional: ¼ cup peanut butter chips for extra flavor
👩🍳 Directions
Step 1: Prepare the Dough
In a large mixing bowl, beat the butter, cream cheese, brown sugar, and granulated sugar until creamy and smooth.
Add in the egg and vanilla extract, mixing until combined.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry mixture into the wet ingredients, mixing just until combined.
Fold in the chocolate chips, peanut butter chips (if using), and chopped Reese’s.
Step 2: Chill
Cover the dough and refrigerate for at least 1 hour (this helps prevent spreading and intensifies flavor).
Step 3: Bake
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Scoop about 2 tablespoons of dough per cookie and roll into balls.
Place them 2 inches apart on the baking sheet. For extra gooeyness, press a few extra Reese’s pieces on top before baking.
Bake for 10–12 minutes, or until the edges are set and the centers look slightly underbaked.
Cool on the pan for 5 minutes, then transfer to a wire rack.
📝 Tips & Notes:
Don’t overbake! The centers should look soft — they’ll set up as they cool.
Want a cheesecake core? Freeze small balls of cream cheese and stuff them into the cookie dough before baking.
Add a pinch of flaky sea salt on top for a gourmet touch!
