π Strawberry Cream Cheese Chill Pie

Crust:
1 pre-made 9-inch graham cracker crust
Filling:
8 oz cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1 cup heavy whipping cream, cold
Topping:
5 cups fresh strawberries, divided
Β½ cup granulated sugar
1Β½ tbsp cornstarch
ΒΌ cup water
1 tsp lemon juice

Step 1: Make the Cream Cheese Filling
In a medium bowl, beat the cream cheese, powdered sugar, and vanilla until smooth and fluffy.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until well combined.
Spread the filling evenly into the graham cracker crust. Chill in the fridge while you prepare the topping.
Step 2: Prepare the Strawberry Glaze
Take 1 cup of strawberries, mash or blend them into a puree.
In a small saucepan, combine the puree with sugar, cornstarch, water, and lemon juice.
Cook over medium heat, stirring constantly, until the mixture thickens and turns glossy (about 5β7 minutes).
Let the glaze cool to room temperature.
Step 3: Assemble the Pie
Slice the remaining 4 cups of strawberries in half or quarters.
Arrange the strawberries on top of the chilled cream cheese filling.
Spoon the cooled glaze over the strawberries evenly.
Chill for at least 4 hours or until fully set.

Use room-temperature cream cheese for a smooth filling.
To save time, the glaze can be made ahead and refrigerated for up to 2 days.
