Light, buttery, and golden little pastries that puff up like magic!
✨ Ingredients:
½ cup (1 stick) butter 🧈

1 cup milk 🥛

¾ cup all-purpose flour 🍞

3 large eggs 🥚

1 tablespoon sugar

½ teaspoon vanilla extract (optional)

Pinch of salt

Honey or powdered sugar for topping (optional) 🍯

👩‍🍳 Instructions:
1. Preheat the oven
Set your oven to 375°F (190°C).

Line a muffin pan or baking sheet with paper liners or lightly grease it.

2. Make the dough (choux base)
In a medium saucepan over medium heat, combine the butter and milk.

Bring to a boil, stirring frequently until butter is fully melted.

Reduce heat to low and add flour all at once, stirring vigorously with a wooden spoon.

Keep stirring until the mixture forms a smooth ball that pulls away from the sides of the pan (1–2 minutes).

Remove from heat and let cool for 5–10 minutes.

3. Add eggs one at a time
Beat in the eggs one at a time, mixing thoroughly after each addition.

The batter will look like it’s separating at first—keep stirring until it’s smooth and glossy.

Stir in sugar, vanilla extract (if using), and a pinch of salt.

4. Spoon into muffin pan
Spoon about 1 heaping tablespoon of batter into each muffin cup or onto the baking sheet (they puff a lot!).

5. Bake
Bake at 375°F (190°C) for 25–30 minutes or until puffed and golden brown.

Avoid opening the oven while baking, or the puffs may collapse.

6. Serve
Serve warm, dusted with powdered sugar or drizzled with honey.

Best eaten fresh, but leftovers can be stored in an airtight container at room temperature for 1–2 days.

🔍 Notes & Tips:
These are similar in technique to cream puffs or gougères (French choux pastry), but richer from the milk and butter.

You can stuff them with pastry cream or whipped cream for a more decadent dessert.

For a savory twist, skip the sugar and vanilla, and add grated cheese or herbs.
