Corn Fritters
Ingredients:
1 cup fresh or frozen corn kernels (thawed if frozen)
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika (optional)
1 large egg
1/4 cup milk
2 tablespoons finely chopped fresh chives or green onions (optional)
Vegetable oil (for frying)
Directions:
Prepare the Mixture:
In a large bowl, combine the flour, baking powder, salt, pepper, and paprika (if using). Mix well.
In a separate bowl, whisk together the egg and milk until combined.
Add the wet ingredients to the dry ingredients and stir until just mixed. The batter will be slightly lumpy.
Add Corn:
Fold in the corn kernels and chives or green onions if using.
Heat Oil:
Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
Fry Fritters:
Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon.
Cook the fritters for 2-3 minutes on each side, or until golden brown and crispy. Avoid overcrowding the pan; cook in batches if necessary.
Remove the fritters with a slotted spoon and drain on paper towels.
Serve:
Serve the corn fritters warm with your favorite dipping sauce or as a side dish. They are great with a dollop of sour cream or a sprinkle of additional chives.
