Classic Cucumber Sandwich
Ingredients:
– 1 cucumber, thinly sliced
– 8 slices of bread (white or whole wheat)
– 4 ounces cream cheese, softened
– 1 tablespoon fresh dill, chopped
– 1 tablespoon fresh chives, chopped
– 1 tablespoon lemon juice
– Salt and pepper to taste
Directions:
1. In a small bowl, mix the softened cream cheese, fresh dill, chives, lemon juice, salt, and pepper until well combined.
2. Spread the cream cheese mixture evenly on one side of each slice of bread.
3. Layer the cucumber slices on four of the bread slices.
4. Top with the remaining bread slices, cream cheese side down, to form sandwiches.
5. Cut off the crusts and slice each sandwich into quarters or halves, as desired.
