Zucchini Pizza Bites

Ingredients:
2 medium zucchinis
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup marinara sauce
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Optional toppings: sliced pepperoni, chopped bell peppers, olives, mushrooms, or any other favorite pizza toppings

Directions:
Prepare the Zucchini:
Preheat your oven to 400°F (200°C).
Wash and slice the zucchinis into 1/4-inch thick rounds.
Use a paper towel to pat the slices dry to remove excess moisture.
Season the Zucchini:
In a large bowl, toss the zucchini slices with olive oil, garlic powder, dried oregano, dried basil, salt, and black pepper until evenly coated.
Bake the Zucchini:
Arrange the seasoned zucchini slices in a single layer on a baking sheet lined with parchment paper.
Bake in the preheated oven for 10-12 minutes, or until the zucchini slices are slightly tender but still firm.
Add Pizza Toppings:
Remove the zucchini from the oven.
Spoon a small amount of marinara sauce onto each zucchini slice.
Sprinkle shredded mozzarella cheese and grated Parmesan cheese over the marinara sauce.
Add any optional toppings if desired.
Broil the Pizza Bites:
Return the baking sheet to the oven and switch to broil mode.
Broil for 2-4 minutes, or until the cheese is melted and bubbly, and the tops are lightly browned. Watch closely to prevent burning.
Serve:
Remove from the oven and let cool for a few minutes.
Garnish with fresh basil or parsley if desired.
Serve warm as a delicious appetizer or snack.
