Scalloped Potatoes and Ham

Ingredients:
6 medium potatoes, thinly sliced
2 cups cooked ham, diced
1 small onion, finely chopped
2 cloves garlic, minced
4 tablespoons butter
4 tablespoons all-purpose flour
3 cups milk
1 ½ cups shredded cheddar cheese
½ cup grated Parmesan cheese
Salt and pepper to taste
1 teaspoon dried thyme (optional)
1 teaspoon paprika (optional)
Fresh parsley, chopped (for garnish)

Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
Prepare the Potatoes and Ham:
Thinly slice the potatoes using a mandoline or sharp knife for even cooking. Dice the cooked ham into small, bite-sized pieces. Set both aside.
Make the Cheese Sauce:
In a medium saucepan, melt the butter over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent and fragrant. Stir in the flour to form a roux, cooking for about 1-2 minutes.
Gradually whisk in the milk, stirring constantly to prevent lumps. Continue to cook and stir until the sauce thickens, about 5-7 minutes.
Once thickened, remove the sauce from heat and stir in the cheddar cheese, Parmesan cheese, thyme (if using), paprika, salt, and pepper. Mix until the cheese is fully melted and the sauce is smooth.
Assemble the Dish:
In the greased baking dish, layer half of the sliced potatoes. Top with half of the diced ham. Pour half of the cheese sauce over the potatoes and ham, spreading it evenly.
Repeat with the remaining potatoes, ham, and cheese sauce, ensuring everything is well-covered.
Bake:
Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and continue baking for an additional 25-30 minutes, or until the potatoes are tender and the top is golden and bubbly.
Garnish and Serve:
Once baked, let the dish cool for a few minutes before serving. Garnish with chopped fresh parsley if desired. Serve warm.
