Peanut Butter Cornflake Cookies (No Bake)

Ingredients:
1 cup granulated sugar
1 cup light corn syrup
1 cup creamy peanut butter
6 cups cornflakes cereal
1/2 teaspoon vanilla extract (optional)
A pinch of salt (optional)

Directions:
Prepare the Mixture:
In a medium saucepan, combine the granulated sugar and corn syrup. Heat over medium heat, stirring occasionally, until the mixture comes to a boil.
Add Peanut Butter:
Once boiling, remove from heat and immediately stir in the creamy peanut butter until fully melted and combined. If using vanilla extract and salt, stir them in at this point.
Combine with Cornflakes:
In a large mixing bowl, pour the peanut butter mixture over the cornflakes cereal. Gently fold the cereal into the mixture until well coated.
Shape Cookies:
Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a wax paper-lined baking sheet or parchment paper. Flatten them slightly with the back of the spoon.
Cool and Set:
Allow the cookies to cool and set at room temperature for about 30 minutes or until firm. They will harden as they cool.
Store:
Store in an airtight container at room temperature for up to a week, or refrigerate to extend freshness.
