Okra Patties
Ingredients:
– 1 pound fresh okra, chopped
– 1 small onion, finely chopped
– 1 egg, beaten
– 1/2 cup cornmeal
– 1/2 cup all-purpose flour
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 teaspoon cayenne pepper
– Vegetable oil for frying
Directions:
1. In a large bowl, mix chopped okra, onion, and beaten egg.
2. In a separate bowl, combine cornmeal, flour, salt, black pepper, and cayenne pepper.
3. Gradually add the dry mixture to the okra mixture, stirring well until combined.
4. Heat vegetable oil in a skillet over medium heat.
5. Drop spoonfuls of the okra batter into the hot oil, flattening slightly with the back of the spoon.
6. Fry until golden brown, about 3-4 minutes per side.
7. Remove from skillet and drain on paper towels.
