Double Crunch Honey Garlic Chicken Breasts
Ingredients:
4 boneless, skinless chicken breasts
1/2 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper (optional)
2 large eggs
2 tablespoons water
Oil for frying (vegetable or canola)
Honey Garlic Sauce:
1/3 cup honey
4 garlic cloves, minced
2 tablespoons soy sauce
1/4 cup water
1 tablespoon cornstarch
1 tablespoon rice vinegar (or apple cider vinegar)
Directions:
Prepare Chicken:
Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness (about 1/2 inch) using a mallet or rolling pin. Set aside.
Prepare the Coating:
In a shallow dish, mix together the flour, cornstarch, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper.
In another bowl, whisk the eggs with water until combined.
Coat the Chicken:
Dip each chicken breast into the flour mixture, making sure to coat it well. Then, dip it into the egg mixture, followed by a second coat of the flour mixture for a thick, crispy layer.
Fry the Chicken:
Heat oil in a large skillet over medium-high heat (about 1/4 inch deep). Once the oil is hot, carefully add the chicken breasts and cook for 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
Transfer the fried chicken to a paper towel-lined plate to drain excess oil.
Make the Honey Garlic Sauce:
In a small saucepan, combine honey, minced garlic, soy sauce, and rice vinegar. Bring to a simmer over medium heat.
In a small bowl, mix the water with cornstarch to create a slurry. Gradually stir the slurry into the sauce and cook for 1-2 minutes until the sauce thickens.
Coat the Chicken:
Drizzle the honey garlic sauce over the crispy chicken breasts or dip the chicken in the sauce to fully coat it.
Serve:
Garnish with chopped green onions or sesame seeds if desired. Serve with rice, steamed vegetables, or a fresh salad.
