Reese’s Peanut Butter Cup Cheesecake
Ingredients:
Crust:
1 1/2 cups Oreo cookie crumbs
1/4 cup unsalted butter, melted
Cheesecake Filling:
24 oz (3 blocks) cream cheese, softened
1 cup granulated sugar
1 cup creamy peanut butter
1/2 cup sour cream
3 large eggs
1 teaspoon vanilla extract
12 mini Reese’s Peanut Butter Cups, chopped
Chocolate Ganache Topping:
1/2 cup heavy cream
1 cup semi-sweet chocolate chips
4-6 Reese’s Peanut Butter Cups, chopped (for garnish)
Directions:
Prepare the Crust:
Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
In a medium bowl, combine the Oreo cookie crumbs and melted butter. Press the mixture into the bottom of the springform pan to create an even crust layer.
Bake the crust for 10 minutes. Remove from the oven and allow it to cool.
Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
Add the peanut butter and sour cream, mixing well to combine. Scrape down the sides of the bowl as needed.
Add the eggs one at a time, mixing on low speed until fully incorporated after each addition. Stir in the vanilla extract.
Gently fold in the chopped Reese’s Peanut Butter Cups into the filling mixture.
Bake the Cheesecake:
Pour the cheesecake filling over the prepared crust and spread it out evenly.
Bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight for best results.
Prepare the Chocolate Ganache Topping:
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chocolate chips, stirring until smooth and melted.
Allow the ganache to cool slightly, then pour it over the chilled cheesecake.
Garnish with chopped Reese’s Peanut Butter Cups on top of the ganache.
Chill and Serve:
Refrigerate the cheesecake for an additional 30 minutes to set the ganache.
Slice, serve, and enjoy!
