German Crumble Cake (Tarta Alemana que se Deshace en la Boca)

Ingredients:
2 cups (250g) all-purpose flour
3/4 cup (150g) sugar
1/2 cup (115g) unsalted butter, cold and cubed
1 teaspoon baking powder
1/4 teaspoon salt
1 large egg
1 teaspoon vanilla extract
For the Filling:
1/2 cup (100g) sugar
1/4 cup (30g) cornstarch
1/4 teaspoon salt
2 cups (480ml) milk
2 large egg yolks
1 teaspoon vanilla extract
1 tablespoon unsalted butter

Instructions:
1. Preheat your oven to 350°F (175°C). Grease a 9-inch (23cm) round cake pan and line the bottom with parchment paper.
2. In a large bowl, mix the flour, sugar, baking powder, and salt. Add the cold butter cubes and mix using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
3. Add the egg and vanilla extract to the mixture and combine until a dough forms. Press about 2/3 of the dough into the bottom of the prepared cake pan to form a crust.
4. To prepare the filling, combine sugar, cornstarch, and salt in a medium saucepan. Gradually add the milk, whisking constantly to avoid lumps. Cook over medium heat, stirring constantly, until the mixture thickens.
5. Remove the saucepan from heat and whisk in the egg yolks one at a time. Return to heat and cook for an additional 2 minutes, stirring constantly.
6. Remove from heat, then stir in vanilla extract and butter until smooth.
7. Pour the prepared filling over the crust in the cake pan.
8. Crumble the remaining dough over the filling to create a streusel topping.
9. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown.
10. Allow the cake to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
11. Slice and serve. The cake will have a melt-in-your-mouth texture.
