Bang Bang Shrimp Pasta

Ingredients:
1 lb large shrimp, peeled and deveined
12 oz linguine or spaghetti
2 tbsp olive oil
3 garlic cloves, minced
1/2 cup mayonnaise
1/4 cup sweet chili sauce
1 tbsp Sriracha (adjust to taste)
1 tbsp lime juice (optional)
1/4 cup green onions, sliced (for garnish)
Salt and pepper to taste
Fresh parsley or cilantro, chopped (for garnish)

Directions:
Cook the Pasta:
Boil a large pot of salted water. Cook the pasta according to the package instructions until al dente. Drain and set aside.
Prepare the Sauce:
In a small bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and lime juice (if using) until smooth. Adjust the Sriracha for more or less heat based on your preference.
Cook the Shrimp:
Heat olive oil in a large skillet over medium-high heat. Add minced garlic and sauté for about 1 minute until fragrant.
Add shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and opaque. Remove shrimp from the skillet and set aside.
Combine Pasta and Sauce:
In the same skillet, add the drained pasta and pour the prepared Bang Bang sauce over it. Toss well to coat the pasta evenly with the sauce. If the pasta seems dry, add a bit of reserved pasta water to loosen it.
Add Shrimp:
Add the cooked shrimp back to the skillet with the pasta and toss gently to combine everything.
Garnish and Serve:
Garnish with sliced green onions and fresh parsley or cilantro. Serve hot and enjoy!
