Classic Macaroni Salad
Ingredients:
2 cups elbow macaroni (or your favorite small pasta)
1 cup mayonnaise
2 tablespoons Dijon mustard (optional)
2 tablespoons apple cider vinegar
1 tablespoon sugar
1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1/2 cup celery, finely chopped
1/2 cup red bell pepper, finely chopped
1/4 cup red onion, finely chopped
1/4 cup dill pickles or sweet pickles, chopped (optional)
3 hard-boiled eggs, chopped (optional)
2 tablespoons fresh parsley, chopped (optional)
Instructions:
Cook the Pasta:
Cook the macaroni in a large pot of salted boiling water according to the package instructions. Drain and rinse under cold water to cool. Set aside.
Prepare the Dressing:
In a large mixing bowl, whisk together the mayonnaise, Dijon mustard (if using), apple cider vinegar, sugar, salt, and black pepper until smooth and creamy.
Combine Ingredients:
Add the cooked macaroni, celery, red bell pepper, red onion, and pickles (if using) to the bowl with the dressing. Gently toss everything together until well combined.
Add Eggs (Optional):
If using hard-boiled eggs, fold them into the salad gently.
Chill:
Cover the bowl and refrigerate the macaroni salad for at least 1 hour to allow the flavors to meld. You can make this salad a day ahead if desired.
Garnish and Serve:
Before serving, give the salad a final stir and garnish with chopped parsley for a fresh touch.
