Ingredients:
2 cups shredded Monterey Jack cheese
1/4 cup diced jalapeños (fresh or pickled)
1/4 cup cream cheese, softened
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
Salt and pepper, to taste
1 cup all-purpose flour
2 eggs, beaten
1 cup seasoned breadcrumbs
Oil for frying

Directions:
Prepare Cheese Mixture:
In a large bowl, combine Monterey Jack cheese, diced jalapeños, cream cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well until evenly blended.
Scoop the mixture into small 1-inch balls and place them on a lined baking sheet.
Freeze the cheese balls for at least 1-2 hours or until firm.
Breading Process:
Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
Coat each frozen cheese ball in flour, then dip it into the beaten eggs, and finally roll it in breadcrumbs until fully coated. For extra crunch, repeat the egg and breadcrumb coating once more.
Fry the Bites:
Heat oil in a deep fryer or a large, deep skillet to 350°F (175°C). Carefully drop a few breaded cheese balls into the hot oil and fry for 2-3 minutes or until golden brown and crispy.
Use a slotted spoon to remove the bites from the oil and place them on a paper towel-lined plate to drain excess oil.
Repeat the frying process with the remaining cheese balls.

Serve the rattlesnake bites hot with your favorite dipping sauce, such as ranch or a zesty chili-lime sauce.
