Cheesy Ranch Oven Roasted Potatoes

Ingredients:
2 lbs baby potatoes (or small red potatoes), halved or quartered
3 tablespoons olive oil
1 packet (1 oz) ranch seasoning mix
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
Salt and pepper to taste
1/4 cup chopped fresh parsley (optional, for garnish)

Directions:
Preheat Oven:
Preheat your oven to 400°F (200°C).
Prepare Potatoes:
Wash and dry the potatoes. Cut them into halves or quarters if they are large.
Season Potatoes:
In a large mixing bowl, toss the potatoes with olive oil, ranch seasoning mix, garlic powder, onion powder, paprika, salt, and pepper until they are evenly coated.
Roast Potatoes:
Spread the seasoned potatoes in a single layer on a baking sheet. Make sure they are not overcrowded to ensure they roast evenly.
Bake:
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender. Stir or flip the potatoes halfway through the cooking time for even browning.
Add Cheese:
Remove the potatoes from the oven and sprinkle the shredded cheddar cheese and grated Parmesan cheese over the top.
Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Remove from the oven and garnish with chopped fresh parsley if desired.
Serve warm as a side dish.
