Butter Seared Lobster Tails

Ingredients:
4 lobster tails
1/4 cup unsalted butter
2 tablespoons olive oil
2 garlic cloves, minced
1 tablespoon lemon juice
1 teaspoon paprika
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)
Lemon wedges for serving (optional)

Directions:
Prepare Lobster Tails:
Using kitchen shears, cut the top shell of each lobster tail lengthwise down the middle, stopping just before the tail fan. Gently pull apart the shell to expose the meat. Remove any shell fragments and the intestinal vein.
Season Lobster Tails:
Season the lobster meat with salt, pepper, and paprika.
Heat Skillet:
Heat the olive oil in a large skillet over medium-high heat.
Sear Lobster:
Place the lobster tails, meat side down, into the hot skillet. Cook for 3-4 minutes until the meat is golden brown. Flip the lobster tails over and cook for an additional 2-3 minutes, or until the lobster meat is opaque and cooked through.
Make Butter Sauce:
While the lobster tails are cooking, melt the butter in a small saucepan over low heat. Add the minced garlic and cook until fragrant, about 1 minute. Stir in the lemon juice.
Finish and Serve:
Once the lobster tails are cooked, remove them from the skillet. Brush the lobster meat with the garlic butter sauce. Garnish with chopped fresh parsley and serve with lemon wedges, if desired.
