Fried Pineapple with Coconut Crust

Fried Pineapple with Coconut Crust

Ingredients:
1 fresh pineapple, peeled, cored, and sliced into rings
1 cup all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup shredded coconut
1 large egg
1/2 cup milk
Vegetable oil, for frying
Optional: powdered sugar, for dusting
Optional: honey or caramel sauce, for drizzling

Directions:
Prepare the Pineapple:
Peel and core the pineapple. Slice it into rings or wedges, depending on your preference.
Prepare the Coating:
In a shallow bowl, mix together the flour, sugar, baking powder, and salt.
Place the shredded coconut in a separate shallow bowl.
In a third bowl, whisk together the egg and milk until well combined.
Coat the Pineapple:
Dip each pineapple slice or wedge into the flour mixture, coating it evenly.
Next, dip it into the egg mixture, allowing any excess to drip off.
Finally, coat it with the shredded coconut, pressing gently to adhere.
Heat the Oil:
Heat about 1/4 inch of vegetable oil in a large skillet over medium heat until hot. You can test if the oil is ready by dropping a small piece of bread into the oil; it should sizzle and brown quickly.
Fry the Pineapple:
Carefully add the coated pineapple slices to the hot oil, being careful not to overcrowd the pan.
Fry for about 2-3 minutes on each side, or until golden brown and crispy.
Use tongs or a slotted spoon to remove the fried pineapple from the oil and place it on a plate lined with paper towels to drain excess oil.
Serve:
Dust with powdered sugar if desired.
Drizzle with honey or caramel sauce if you like.
Serve warm as a delicious treat or dessert.
