John Wayne Casserole
Ingredients:
For the Base:
1 lb ground beef
1 packet taco seasoning
1/2 cup water
1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained
1 can (4 oz) diced green chilies
1 large onion, chopped
1 large bell pepper, chopped
2 cups shredded cheddar cheese
1 cup sour cream
1 cup mayonnaise
2 cups Bisquick baking mix
1/2 cup water (for the Bisquick mix)
Directions:
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Step 2: Prepare the Bisquick Crust
In a medium mixing bowl, combine Bisquick mix and 1/2 cup of water. Stir until a soft dough forms.
Press the dough into the bottom of the greased baking dish to form the crust.
Step 3: Brown the Ground Beef
In a large skillet, cook the ground beef over medium heat until browned and crumbled. Drain any excess grease.
Add the taco seasoning and 1/2 cup water to the beef, stirring to combine. Cook for another 2-3 minutes until the liquid reduces.
Stir in the diced tomatoes with green chilies and set aside.
Step 4: Cook the Vegetables
In the same skillet, add a little oil and cook the chopped onions and bell peppers until softened, about 5 minutes. Remove from heat.
Step 5: Make the Creamy Mixture
In a separate bowl, mix together sour cream, mayonnaise, and half of the shredded cheddar cheese. Set aside.
Step 6: Assemble the Casserole
Spread the cooked ground beef mixture over the Bisquick crust.
Layer the sautéed onions and bell peppers on top of the beef.
Evenly spread the sour cream and mayonnaise mixture over the vegetables.
Top with the remaining cheddar cheese.
Step 7: Bake the Casserole
Bake the casserole in the preheated oven for 30-35 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
Step 8: Serve
Let the casserole cool for a few minutes before slicing and serving.
