Frozen Chocolate-Covered Bananas
Ingredients:
4 ripe bananas
2 cups semi-sweet chocolate chips (or dark chocolate)
2 tablespoons coconut oil (optional, for a smoother chocolate coating)
Toppings (optional): chopped nuts, sprinkles, shredded coconut, crushed cookies
Directions:
Step 1: Prepare the Bananas
Peel the bananas and slice them in half crosswise (or into thirds for smaller portions).
Insert a popsicle stick or wooden skewer into each banana piece. Place the bananas on a parchment-lined baking sheet and freeze for at least 2 hours, or until completely frozen.
Step 2: Melt the Chocolate
In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth. Alternatively, melt the chocolate using a double boiler on the stovetop.
Step 3: Dip the Bananas
Remove the frozen bananas from the freezer.
Working quickly, dip each banana piece into the melted chocolate, using a spoon to help coat them evenly. Let any excess chocolate drip off.
Step 4: Add Toppings (Optional)
Immediately after dipping, sprinkle your desired toppings (chopped nuts, sprinkles, coconut, etc.) over the chocolate before it hardens.
Place the dipped bananas back on the parchment-lined sheet.
Step 5: Freeze Again
Return the chocolate-covered bananas to the freezer for about 30 minutes, or until the chocolate is set.
Step 6: Serve and Enjoy!
