Kielbasa Cabbage Potato Skillet

Ingredients:
1 lb Kielbasa sausage (sliced into 1/2-inch rounds)
1 small green cabbage (chopped)
4-5 medium potatoes (diced)
1 small onion (diced)
3 cloves garlic (minced)
2 tbsp olive oil
1 tbsp butter
1 tsp smoked paprika
1/2 tsp dried thyme
Salt and pepper to taste
Fresh parsley (chopped, for garnish)

Directions:
Cook the Potatoes:
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they begin to brown and become tender. Remove the potatoes from the skillet and set them aside.
Cook the Kielbasa:
In the same skillet, add the remaining tablespoon of olive oil and the sliced kielbasa. Cook for 4-5 minutes, until the sausage is browned on both sides. Remove the kielbasa from the skillet and set it aside with the potatoes.
Sauté the Vegetables:
Add butter to the skillet, followed by the diced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent. Then, add the chopped cabbage and cook for another 5-7 minutes, or until the cabbage softens and begins to caramelize.
Season and Combine:
Stir in the smoked paprika, dried thyme, salt, and pepper. Return the cooked potatoes and kielbasa to the skillet. Toss everything together and cook for an additional 3-5 minutes, allowing the flavors to meld.
Serve:
Garnish with fresh parsley and serve warm. This dish pairs well with a dollop of sour cream or mustard for extra flavor.
