Mexican Chicken with Cheese Sauce
Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp ground cumin
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
1/2 tsp dried oregano
Salt and pepper to taste
For the Cheese Sauce:
2 tbsp unsalted butter
2 tbsp all-purpose flour
1 cup milk
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 tsp ground cumin
1/2 tsp chili powder
1/4 tsp garlic powder
Salt and pepper to taste
For Garnish:
Fresh cilantro, chopped
Sliced jalapeños (optional)
Lime wedges
Directions:
Prepare the Chicken:
Preheat your oven to 375°F (190°C).
In a small bowl, mix together the cumin, paprika, garlic powder, onion powder, chili powder, oregano, salt, and pepper.
Rub the chicken breasts with olive oil and then coat with the spice mixture.
Heat a skillet over medium-high heat and sear the chicken breasts for 2-3 minutes per side, until golden brown.
Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C). Remove from the oven and let the chicken rest.
Make the Cheese Sauce:
In a medium saucepan, melt the butter over medium heat.
Whisk in the flour and cook for about 1 minute, until the mixture is bubbling and light golden.
Gradually whisk in the milk, and cook, stirring constantly, until the mixture thickens and starts to simmer.
Reduce heat to low and stir in the cheddar cheese and Monterey Jack cheese until fully melted and smooth.
Add the ground cumin, chili powder, garlic powder, salt, and pepper to taste. Stir well.
Assemble the Dish:
Slice the baked chicken breasts and place them on a serving plate or individual plates.
Pour the cheese sauce generously over the chicken.
Garnish with fresh cilantro, sliced jalapeños (if using), and lime wedges.
