Cheeseburger Meatloaf

Ingredients:
1 pound ground beef
1/2 pound ground pork (optional, for extra flavor)
1 cup shredded cheddar cheese
1/2 cup finely chopped onion
1/2 cup finely chopped bell pepper (red or green)
1/4 cup ketchup
1/4 cup mayonnaise
1 tablespoon Dijon mustard
2 cloves garlic, minced
1 egg
1 cup breadcrumbs
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano (optional)
1/2 cup barbecue sauce (for topping)

Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
Prepare the Meat Mixture:
In a large bowl, combine the ground beef and ground pork. Add the shredded cheddar cheese, chopped onion, chopped bell pepper, ketchup, mayonnaise, Dijon mustard, minced garlic, egg, breadcrumbs, salt, pepper, and dried oregano (if using). Mix until just combined—do not overmix.
Shape and Bake:
Transfer the meat mixture into the prepared loaf pan and shape it into a loaf. Spread the barbecue sauce evenly over the top of the meatloaf.
Bake:
Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). If the top starts to brown too quickly, you can cover it loosely with foil.
Rest and Serve:
Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps the juices redistribute and makes for easier slicing.
Serve:
Slice and serve the meatloaf with your favorite sides, like mashed potatoes, green beans, or a fresh salad.
