Slow Cooker Beef and Potato Au Gratin
Ingredients:
1 lb ground beef
5 medium potatoes, thinly sliced
1 medium onion, diced
3 cups shredded cheddar cheese
1 cup beef broth
1 can (10.5 oz) cream of mushroom soup
1 cup heavy cream
2 cloves garlic, minced
2 tbsp butter
Salt and pepper to taste
1 tsp paprika
1 tsp dried thyme
Directions:
Cook Beef: In a skillet, brown the ground beef with the diced onion and garlic over medium heat. Season with salt, pepper, paprika, and thyme. Drain any excess fat.
Prepare Slow Cooker: Grease the bottom of your slow cooker with butter. Add a layer of thinly sliced potatoes.
Layering: On top of the potatoes, add a portion of the browned beef mixture. Sprinkle a layer of shredded cheddar cheese. Repeat the layers until all ingredients are used, finishing with a final layer of potatoes and cheese on top.
Add Liquid: In a bowl, mix the beef broth, cream of mushroom soup, and heavy cream. Pour this mixture evenly over the layers in the slow cooker.
Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender.
Serve: Once cooked, allow the dish to sit for 10 minutes before serving to let the cheese and sauce set.
