Ingredients:
3 cups cooked chicken, shredded (rotisserie chicken works great)
8-10 corn tortillas (or flour, if preferred)
2 cups shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
1 cup sour cream
1 can (10 oz) green enchilada sauce (or red enchilada sauce, if preferred)
1 can (4 oz) diced green chiles (optional, for extra flavor)
1 small onion, diced
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and pepper, to taste
Fresh cilantro, for garnish (optional)

Instructions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
2. Prepare the Chicken Mixture:
In a skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
Stir in the minced garlic, cumin, and chili powder, cooking for about 1 minute until fragrant.
Add the shredded chicken and diced green chiles (if using) to the skillet. Stir to combine and season with salt and pepper. Set aside.
3. Make the Sour Cream Sauce:
In a medium bowl, mix the sour cream and enchilada sauce until smooth. Taste and adjust seasoning if needed.

Tear or cut the tortillas into halves or quarters, and layer them over the sauce to cover the bottom.

Repeat the layers: tortillas, chicken mixture, cheese, and sauce, until you run out of ingredients, ending with a final layer of sauce and cheese on top.
5. Bake:
Cover the casserole with foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
6. Garnish and Serve:
Let the casserole cool slightly before serving. Garnish with fresh cilantro if desired.
