Crispy Crunchy Parmesan Potatoes
Ingredients:
2 lbs baby potatoes (or Yukon Gold potatoes), halved
1/2 cup grated Parmesan cheese
1/4 cup melted butter
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper, to taste
2 tablespoons chopped fresh parsley (optional)
Directions:
Prepare the Potatoes:
Preheat your oven to 425°F (220°C) and lightly grease a large baking sheet.
Wash and halve the baby potatoes. If using larger potatoes, cut them into quarters or smaller pieces.
Create the Parmesan Mixture:
In a small bowl, mix together the grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
Coat the Potatoes:
In a large bowl, toss the potatoes with melted butter and olive oil until evenly coated.
Add the Parmesan mixture to the potatoes and toss well to coat each piece in the cheese and seasoning.
Bake the Potatoes:
Arrange the potatoes on the prepared baking sheet in a single layer, cut side down. This will help them get crispy.
Bake for 25-30 minutes, or until the potatoes are golden brown and crispy. Check after 20 minutes and flip them for even crispiness if desired.
Garnish and Serve:
Remove the potatoes from the oven and garnish with fresh parsley for a pop of color and flavor, if desired.
Serve immediately as a side dish with your favorite dipping sauce or main course.
