Easy Peach Cobbler Muffins

Ingredients:
1 ½ cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup granulated sugar
1/4 cup brown sugar
1/2 cup unsalted butter, melted
1 large egg
1 tsp vanilla extract
1/2 cup milk
1 ½ cups diced fresh or canned peaches (drained)
Crumble Topping:
1/4 cup all-purpose flour
1/4 cup brown sugar
1/4 tsp ground cinnamon
3 tbsp unsalted butter, cold and cubed

Directions:
Preheat Oven & Prepare Muffin Pan:
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the cups with nonstick spray.
Mix the Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
Combine Wet Ingredients:
In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
Add the egg and vanilla extract, and whisk until smooth. Stir in the milk until everything is well incorporated.
Fold in Peaches & Mix with Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Gently fold in the diced peaches, being careful not to overmix the batter.
Prepare the Crumble Topping:
In a small bowl, mix the flour, brown sugar, and cinnamon. Cut in the cold butter with a fork or pastry cutter until the mixture resembles coarse crumbs.
Fill Muffin Cups & Add Topping:
Spoon the batter evenly into the prepared muffin cups, filling them about 3/4 full.
Sprinkle the crumble topping over each muffin.
Bake the Muffins:
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
