Amish Onion Fritters—crispy

Amish Onion Fritters—crispy

Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons sugar
2 teaspoons salt
1/2 teaspoon black pepper
1 tablespoon cornmeal (optional for extra crunch)
3 large onions, thinly sliced (about 4 cups)
1 cup milk
Vegetable oil, for frying

Instructions:
1. Prepare the Batter:
In a large mixing bowl, whisk together the flour, baking powder, sugar, salt, black pepper, and cornmeal (if using).
Gradually add the milk, stirring until you have a smooth, thick batter.
2. Add the Onions:
Add the thinly sliced onions to the batter and stir until the onions are fully coated with the mixture.
3. Heat the Oil:
In a large skillet or deep frying pan, heat about 1/2 inch of vegetable oil over medium heat. The oil should be hot but not smoking (about 350°F or 175°C).
4. Fry the Fritters:
Drop spoonfuls of the onion mixture into the hot oil, flattening them slightly with the back of a spoon.
Fry each side for 2-3 minutes, or until golden brown and crispy.
5. Drain:
Remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.
6. Serve:
Serve the Amish Onion Fritters hot, with ketchup, sour cream, or your favorite dipping sauce!
