Banana Fritters
Ingredients:
3 ripe bananas
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 large egg
1/4 cup milk
Vegetable oil (for frying)
Powdered sugar (for dusting, optional)
Directions:
Peel and mash the bananas in a large bowl until smooth.
In a separate bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
Add the egg and milk to the mashed bananas and mix well.
Gradually add the dry ingredients to the banana mixture, stirring until just combined.
Heat about 1 inch of vegetable oil in a skillet over medium heat.
Drop spoonfuls of the batter into the hot oil, flattening slightly with the back of the spoon. Fry until golden brown on each side, about 2-3 minutes per side.
Remove the fritters from the oil and drain on paper towels.
Dust with powdered sugar before serving if desired.
