Caramel Crispix
Ingredients:
6 cups Crispix cereal
1 cup unsalted butter
1 cup packed brown sugar
1/2 cup light corn syrup
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 cup semisweet chocolate chips (optional)
1 cup chopped nuts (optional)
Directions:
Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat.
In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar, corn syrup, and salt. Bring to a boil while stirring constantly. Boil for 2-3 minutes without stirring.
Remove the saucepan from heat and stir in the vanilla extract.
Place the Crispix cereal in a large mixing bowl. Pour the caramel sauce over the cereal and gently stir until all the cereal is coated.
Spread the caramel-coated cereal evenly onto the prepared baking sheet.
Bake in the preheated oven for 45 minutes, stirring every 15 minutes to ensure even coating.
Remove from the oven and let cool completely. If using chocolate chips and nuts, melt the chocolate chips in a microwave-safe bowl or double boiler, then drizzle over the cooled cereal. Sprinkle with chopped nuts if desired.
Once the chocolate is set, break into pieces and store in an airtight container.
