Pizza Grilled Cheese
Ingredients:
2 slices of bread (your choice of white, wheat, or sourdough)
2 tbsp pizza sauce (plus extra for dipping)
1/2 cup shredded mozzarella cheese
6-8 slices of pepperoni (or your favorite pizza toppings)
1/2 tsp dried oregano (optional)
1/2 tsp garlic powder
2 tbsp butter, softened
Instructions:
Prepare the bread:
Spread a thin layer of softened butter on one side of each slice of bread. This will be the outside of the sandwich that gets toasted.
Assemble the sandwich:
On the unbuttered side of one bread slice, spread 1 tablespoon of pizza sauce evenly. Sprinkle half of the shredded mozzarella cheese on top of the sauce. Add the pepperoni slices (or your choice of pizza toppings) over the cheese.
Sprinkle with dried oregano and garlic powder for extra pizza flavor, if desired.
Top with the remaining mozzarella cheese, and spread 1 tablespoon of pizza sauce on the unbuttered side of the second bread slice. Place this slice, sauce-side down, on top of the sandwich.
Cook the grilled cheese:
Heat a non-stick skillet or griddle over medium heat. Once hot, place the sandwich in the pan, buttered side down.
Cook for 2-4 minutes on each side, or until the bread is golden brown and crispy and the cheese inside is melted.
Serve:
Remove the sandwich from the skillet and let it cool for a minute. Slice it in half and serve with extra pizza sauce on the side for dipping.
