Ingredients:
For the Shrimp:
1 lb large shrimp, peeled and deveined
1 tbsp Old Bay seasoning
1 tbsp olive oil
1 clove garlic, minced
1 tbsp lime juice
For the Burrito Filling:
1 cup cooked rice
1/2 cup black beans, drained and rinsed
1/2 cup corn kernels (fresh, frozen, or canned)
1 avocado, diced
1/2 cup shredded cheddar or Monterey Jack cheese
1/4 cup sour cream
1/4 cup salsa
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges
4 large flour tortillas

Instructions:
Season and cook the shrimp:
In a medium bowl, toss the shrimp with the Old Bay seasoning, olive oil, minced garlic, and lime juice. Let it marinate for about 10 minutes.
Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes per side, until they are pink and opaque. Remove from heat and set aside.
Prepare the burrito fillings:
Warm the tortillas in a dry skillet or microwave to make them easier to fold.
Lay each tortilla flat and start by adding a layer of cooked rice, black beans, corn, and diced avocado.
Add a few shrimp to each tortilla, followed by a sprinkle of shredded cheese, a dollop of sour cream, and some salsa.
Garnish with fresh cilantro and squeeze lime juice over the filling for extra flavor.
Assemble the burritos:
Fold in the sides of the tortilla, then roll it up tightly from the bottom, enclosing the filling.
Serve:
Serve the Old Bay Shrimp Burritos with extra salsa, sour cream, or lime wedges on the side.
