Southern Squash Casserole

Ingredients:
4 cups yellow squash, sliced
1 small onion, chopped
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup mayonnaise
2 eggs, lightly beaten
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup butter, melted
1 cup crushed buttery crackers (like Ritz)
1/4 cup grated Parmesan cheese
Fresh parsley for garnish (optional)

Directions:
Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
In a large skillet, add sliced squash and onion, cover with water, and cook over medium heat for about 5-7 minutes until tender. Drain well.
In a large bowl, combine the cooked squash and onion with cheddar cheese, sour cream, mayonnaise, eggs, garlic powder, salt, and pepper. Mix well.
Pour the mixture into the prepared baking dish.
In a small bowl, mix together the melted butter, crushed crackers, and Parmesan cheese. Sprinkle evenly over the top of the squash mixture.
Bake for 25-30 minutes or until the top is golden and bubbly.
Let cool slightly before serving. Garnish with fresh parsley if desired.
