Crispy Zucchini
Ingredients:
2 medium zucchinis, sliced into rounds
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, beaten
Cooking spray or olive oil for baking
Directions:
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a bowl, mix together breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
Dip each zucchini slice into the beaten eggs, then coat with the breadcrumb mixture, pressing lightly to ensure the coating sticks.
Place the coated zucchini slices on the prepared baking sheet in a single layer.
Lightly spray the zucchini with cooking spray or drizzle with olive oil for extra crispiness.
Bake for 20-25 minutes, flipping halfway through, until the zucchini is golden and crispy.
Serve immediately with your favorite dipping sauce.
