Chocolate Cobbler
Ingredients:
For the Base:
1 cup all-purpose flour
2 tsp baking powder
1/4 tsp salt
3/4 cup granulated sugar
2 tbsp unsweetened cocoa powder
1/2 cup milk
1/3 cup unsalted butter, melted
1 tsp vanilla extract
For the Topping:
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/4 cup unsweetened cocoa powder
For the Hot Water:
1 1/2 cups boiling water
Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
Prepare the Base:
In a medium bowl, whisk together the flour, baking powder, salt, sugar, and cocoa powder. Stir in the milk, melted butter, and vanilla extract until smooth. Pour the batter into the greased baking dish and spread it evenly.
Make the Topping:
In a separate bowl, mix the granulated sugar, brown sugar, and cocoa powder together. Sprinkle this dry mixture evenly over the top of the batter in the baking dish.
Add Boiling Water:
Pour the boiling water over the entire cobbler (do not stir). The water will sit on top of the sugar mixture but will create a gooey sauce as it bakes.
Bake:
Bake in the preheated oven for 35-40 minutes, or until the top looks set but is slightly cracked. The chocolate sauce will be bubbly underneath.
Serve:
Let the cobbler cool for a few minutes before serving. Spoon the cobbler into bowls, making sure to get some of the rich chocolate sauce from the bottom. Serve warm with vanilla ice cream for the perfect pairing!
