Broccoli Chicken Divan recipe
Ingredients:
2 cups cooked chicken, shredded or cubed (rotisserie chicken works great)
4 cups broccoli florets, steamed or blanched
1 can (10.5 oz) cream of chicken soup (or homemade equivalent)
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon lemon juice
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon curry powder (optional)
1/2 cup shredded cheddar cheese (plus more for topping)
1/4 cup grated Parmesan cheese
1/2 cup breadcrumbs (optional, for topping)
Salt and pepper, to taste
Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Prepare the Broccoli:
Steam or blanch the broccoli florets for about 3-5 minutes, until just tender but still bright green. Drain and set aside.
Mix the Sauce:
In a large bowl, combine the cream of chicken soup, mayonnaise, sour cream, lemon juice, garlic powder, onion powder, curry powder (if using), salt, and pepper. Stir until smooth.
Assemble the Casserole:
In the prepared baking dish, arrange the cooked chicken and broccoli evenly. Pour the sauce mixture over the top and stir gently to combine. Sprinkle the shredded cheddar cheese and Parmesan cheese over the casserole.
Add Topping (Optional):
If desired, sprinkle breadcrumbs over the top of the cheese layer for a crunchy topping.
Bake:
Bake the casserole for 25-30 minutes, or until it is bubbly and the cheese is melted and golden brown.
Serve:
Let the casserole cool for a few minutes before serving. It pairs well with rice, mashed potatoes, or a fresh salad.
