Pumpkin Tiramisu
Ingredients:
For the Pumpkin Mascarpone Filling:
8 oz mascarpone cheese, softened
1 cup pumpkin puree
1 cup heavy cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves (optional)
For the Assembly:
1 cup brewed coffee, cooled (or espresso for a stronger flavor)
2 tablespoons coffee liqueur (optional)
1 (7 oz) package ladyfingers (about 24 pieces)
1 tablespoon cocoa powder, for dusting
Grated chocolate or chocolate shavings (optional, for garnish)
Instructions:
Prepare the Pumpkin Mascarpone Filling:
Whip the Heavy Cream:
In a large bowl, using a hand mixer or stand mixer, beat the heavy cream until stiff peaks form. Set aside.
Mix the Pumpkin Filling:
In a separate bowl, combine the mascarpone cheese, pumpkin puree, powdered sugar, vanilla extract, cinnamon, nutmeg, ginger, and cloves. Beat until smooth and well combined.
Fold in Whipped Cream:
Gently fold the whipped cream into the pumpkin mixture until it’s light and fluffy. Set the mixture aside.
Assemble the Tiramisu:
Prepare the Coffee Dip:
In a shallow dish, combine the cooled coffee and coffee liqueur (if using).
Layer the Ladyfingers:
Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them for too long (about 1-2 seconds per side). Place a layer of dipped ladyfingers at the bottom of an 8×8-inch or 9×9-inch dish.
Add a Layer of Pumpkin Filling:
Spread half of the pumpkin mascarpone mixture evenly over the ladyfingers.
Repeat Layers:
Add another layer of coffee-dipped ladyfingers on top of the pumpkin mixture, followed by the remaining pumpkin filling.
Chill:
Cover the tiramisu and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the ladyfingers to soften.
Serve:
Dust with Cocoa:
Before serving, dust the top of the tiramisu with cocoa powder. You can also garnish with grated chocolate or chocolate shavings for extra indulgence.
Slice and Enjoy:
Cut into squares and serve chilled.
