Creamy Peanut Butter Fudge

Ingredients:
2 cups granulated sugar
1/2 cup unsalted butter
1/2 cup milk (whole milk or evaporated milk)
1 1/3 cups creamy peanut butter
1 teaspoon vanilla extract
1/4 teaspoon salt
2 1/2 cups powdered sugar (sifted)

Instructions:
1. Prepare the Pan:
Line an 8×8-inch square baking dish with parchment paper or foil, leaving an overhang on the sides for easy removal. Lightly grease the paper with butter or non-stick spray.
2. Heat the Sugar Mixture:
In a medium saucepan, combine the granulated sugar, unsalted butter, and milk. Cook over medium heat, stirring constantly, until the mixture begins to boil.
Once boiling, reduce the heat to low and simmer for 2-3 minutes, continuing to stir to prevent burning. The mixture should thicken slightly.
3. Add the Peanut Butter and Vanilla:
Remove the saucepan from the heat. Stir in the creamy peanut butter, vanilla extract, and salt until fully melted and smooth.
4. Mix in the Powdered Sugar:
Gradually add the sifted powdered sugar to the peanut butter mixture, stirring vigorously until the fudge is smooth and well combined. It will start to thicken as it cools.
5. Transfer and Set:
Pour the fudge mixture into the prepared baking dish and spread it evenly with a spatula.
Let the fudge sit at room temperature for about 30 minutes, then transfer it to the refrigerator to chill for at least 2 hours until firm.
6. Slice and Serve:
Once set, lift the fudge out of the pan using the parchment paper overhang. Cut it into small squares or rectangles.
