Cheesy Ranch Potatoes and Sausage
Ingredients:
1 lb (450g) baby potatoes, halved or quartered
1 lb (450g) smoked sausage, sliced into rounds
1 packet (1 oz) ranch seasoning mix
1 cup shredded cheddar cheese
1 cup sour cream
1/2 cup mayonnaise
2 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
2 tbsp chopped fresh parsley (for garnish)
Directions:
Preheat Oven: Preheat your oven to 400°F (200°C).
Prepare the Potatoes: In a large bowl, toss the baby potatoes with olive oil, ranch seasoning mix, garlic powder, onion powder, salt, and pepper until evenly coated.
Combine Ingredients: Add the sliced sausage to the bowl with the potatoes and toss to combine.
Bake: Transfer the potato and sausage mixture to a large baking sheet or casserole dish. Spread it out in an even layer.
Roast: Bake for 30-35 minutes, or until the potatoes are tender and the sausage is browned, stirring halfway through.
Add Cheese: Remove from the oven and sprinkle the shredded cheddar cheese evenly over the top. Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
Prepare the Sauce: While the potatoes and sausage are baking, mix the sour cream and mayonnaise in a small bowl. Season with a bit of salt and pepper.
Serve: Once done, remove from the oven and garnish with chopped fresh parsley. Serve with the sour cream and mayonnaise sauce on the side for dipping.
