Swedish Apple Cake

Swedish Apple Cake

Ingredients:
4 medium apples, peeled, cored, and sliced (Granny Smith or any tart variety works well)
1 teaspoon lemon juice (to toss with the apples)
1 cup granulated sugar
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
½ cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
¼ cup milk
1 teaspoon ground cinnamon (for sprinkling on top)
Powdered sugar (for dusting, optional)

Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or a 9×9-inch square baking dish.
2. Prepare the Apples:
In a bowl, toss the sliced apples with lemon juice and set aside.
3. Mix the Dry Ingredients:
In a large bowl, whisk together the sugar, flour, baking powder, cinnamon, and salt.
4. Combine Wet Ingredients:
In another bowl, combine the melted butter, eggs, vanilla extract, and milk. Mix until well combined.
5. Combine Ingredients:
Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
6. Assemble the Cake:
Pour half of the batter into the prepared cake pan. Layer half of the sliced apples on top, followed by the remaining batter. Top with the remaining apple slices.
Sprinkle the top with the additional cinnamon.
7. Bake:
Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
8. Cool and Serve:
Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Dust with powdered sugar before serving, if desired.
