Mushroom Ravioli with Spinach
Ingredients:
1 package (9 oz) mushroom ravioli
2 tablespoons olive oil
3 cloves garlic, minced
2 cups fresh spinach, roughly chopped
½ cup heavy cream
¼ cup grated Parmesan cheese
Salt and pepper to taste
Red pepper flakes (optional)
Fresh parsley or basil, chopped for garnish
Directions:
Cook the Ravioli: Boil a large pot of salted water and cook the mushroom ravioli according to the package instructions. Drain and set aside.
Sauté the Garlic and Spinach: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes.
Make the Sauce: Reduce the heat to low. Pour in the heavy cream and Parmesan cheese, stirring until the sauce thickens slightly, about 3-5 minutes. Season with salt, pepper, and red pepper flakes (if desired).
Combine: Add the cooked ravioli to the skillet and gently toss to coat the ravioli with the spinach and cream sauce.
Garnish and Serve: Remove from heat and garnish with fresh parsley or basil. Serve hot with extra Parmesan on the side.
